Our Story

From Cajun country to the high desert

Every family has a story that gets told around the fire. Ours starts in Lake Charles, Louisiana.

That’s where Keith comes from, down in Southwest Louisiana, where Saturdays smell like wood smoke, a backyard cookout can turn into a neighborhood party, and everybody is cher. He brought those roots west with him: the smoker and the pit, the Cajun seasoning, the boudin and cracklins, the pot of gumbo on cold nights, and the belief that the best food is always shared.

Here in California, Keith met Andrea. In 2013 we made the move to the Antelope Valley, out in the high desert of the western Mojave, and fell for the place: the Joshua trees, the wide-open skies, the spring poppies, and the sunsets that set the whole valley glowing.

Desert Cajuns is where those two worlds meet. We fuse Cajun food and values with desert heat and beauty to bring a one-of-a-kind experience that can only come from The Desert Cajuns. Low and slow, smoke and spice, family first. It started in 2026 with a family dream and a flock of hens, and we’re just getting going.

Two Places, One Table

Where Louisiana Meets the Desert

Louisiana Roots

  • Lake Charles & Southwest Louisiana. Cajun country, and Keith’s hometown.
  • Smoke & the pit. Pork, brisket and sausage cooked low and slow over wood smoke, Cajun style.
  • Boudin, cracklins & Cajun seasoning. The flavors of a Southwest Louisiana backyard cookout.
  • Gumbo, cast iron & family tables. There’s always room for one more, cher, and a little lagniappe for everybody.
  • Fleur-de-lis & magnolia. A nod to Cajun French heritage and the Louisiana state flower.

Desert Home

  • Joshua trees. The unmistakable silhouettes of the Mojave Desert.
  • California poppies. Our state flower, and the reason the Antelope Valley California Poppy Reserve turns orange in a good spring.
  • Big skies. Golden hour sunsets, starry nights, and plenty of room for a smoker and a crowd.
  • High desert heat. Hot summers, cool nights, and the steady wind that comes with the valley.

“Laissez les bons temps rouler”

Let the good times roll. Fire up the pit, pull up a chair, and stay a while.
